Wallnut Cheese with Dates
A simple recipe to make a sliceable cheese in 15 minutes

Equipment
- Blender
- Medium pan, to heat up mixture
- Form, to poor in the cheese
Ingredients
For the blender
- 1 ½ cup plant milk cashew, soy or unsweetened almond (1 cup = 225 ml)
- ½ cup walnuts you don't have to cut these, they go in the blender
- 1 tbsp lemon juice no lemon? you use aple cider or white vinegar instead
- 1 tbsp agar agar powder this one is essentially, essential
- 2 tbsp tapioca starch no tapioca? Use corn starch 2:1, or plain flower 1:1 instead
- ½ cup hot boiled water
- 1 tsp salt this is a teaspoon! not a table spoon
Keep aside for later
- ⅓ cup walnuts, roughly chopped
- 5 pitted dates, roughly chopped
- optional baking paper I lined the dish with baking paper to give the cheese a cool look
Instructions
- Put the stuff in the blender, exept the chopped walnuts and dates
- blend untill smooth, usually after 30 seconds
- poor the mix into a medium sauce pan and bring to a simmer
- stir for about 5 minutes – constantly. Make sure the thick mixture doesn't stick to the bottom
- add the dates and walnuts and stir for another 2 minutes, mix it well
- now pour the mixture in a wide form or glass dish which holds about 250 ml.
